When I put up a new recipe, I usually flit between wildly complex and stupidly simple. This is one of the stupidly simple ones - hooray! When I make avocado toast, my favourite combinations are either sweet potato toast + almond feta or a really savoury beetroot relish. I decided to put this all together in one dish and take out the avocado - it works brilliantly! This foolproof recipe takes very little effort and is an adorable dish to pop out if you're entertaining. 

FETA STACKS (WITH ROAST BEETROOT + SWEET POTATO)

INGREDIENTS

  • Medium size beetroots
  • Medium size sweet potato (double amount of beetroot)
  • A jar of vegan feta (I recommend an almond or macadamia based one - oil based ones will be gross)
  • Alfalfa sprouts
  • Balsamic vinegar
  • Hot paprika
